Indulge in elation.

Today's Tids Issue 2,831
Opening Stuff:

If you are looking for a reason to feel happy today, take a look at the faces of the Cleveland women freed after 10 years of intolerable captivity by mad men. My heart is pushing out the edges of my smile to the tips of my ears. And I'm hearing the crescendo of Mahler's Second Symphony.

For some reason beyond my comprehension the effete elite are calling a sub par over-the hill-basketball player courageous for coming out. Yet where were all of the media observers when Tim Tebow was courageously standing up for his beliefs and his God? Oh yeah, they were ridiculing and demeaning him with ever so precious columns and cartoons.

The Question:
Double "Q" Day! 1. Which cities do you think have, A - the most Billionaires, B - The most ultra-millionaires (Over $30 Mil), C - The most millionaires, D. Cities in most billionaire category but non existent in "most millionaire" rankings.  2. Name the top Ten NCAA Men's Lacrosse teams as we begin today the 2013 NCAA Championships.

When you consider that South Carolinian's last night elected the inane, amoral Sanford to Congress, you have to wonder if there is any hope at all for America. I don't blame Sanford for falling in love, for finding his true soulmate and all that crap. It happens.  I watched the way he handled it and I saw a self serving egomaniac and basically a deplorable representation of the civilized, honest man. He's a creep, pure and simple. And now, he is in Congress.

Recipe Department:
It's been a while since we had a good recipe here in Our food Department. If you had your heart set on Ginger Roasted Beets Mint and Ricotta Salad, the this is not the place for you. Chicken Saltenbocca is delivered in restaurants in many shapes and tastes. Some, even famous chefs, think it should be a Marsala. Never! Others make the chicken too big or use disingenuous cheeses. So here's one that I believe measures up high on my succulentation scale.

The opening was so long, I decided to start a new paragraph to avoid grey matter depression. Take two large chicken breasts, and slice lengthwise. Pound till they are even in thickness. Cut 2 1/2-3 in by width of breast pieces, Salt and pepper, douse in flour. In large skillet, bring 1 tbs VOO and 1 tbs Unsalted Butter to very hot over an med-high heat. Add chix and cook til bottom is golden, 4 1/2-5 1/2 mins, and flip. Heat another 4-5 mins. Don't over cook. Reduce heat to very low. Sprinkle Chix with chopped or dried sage. Top with cut-to-size prosciutto and Fontina cheese. Cover and cook 1-1 1/2 mins til cheese is melted. Place on serving plate with tented aluminum. Heat pan to sizzle and pour in 3/4 cups of Pinot Noir (For lighter taste use Pinot Grigio). Stir and scrape bottom, boiling off til 1/4 cup remains. Remove from heat and stir in 1 tbs butter, Lift foil and drizzle over chix. To accompany you may want to saute spinach in same pan with a little more butter, parm cheese and chicken broth that will boil away as you cook. (Note: It would not be totally criminal to add sliced mushrooms at the beginning of the process, and leaving them in through deglazing.)

The easiest way to overcome anxiety is to dig down deep within and go out and do something about a problem.

I can see it now, class action lawsuits against Second Hand Cell Phone Radiation. Shoot me.

Interesting to see that the local girl, Jessica Ahlquist, who received national acclaim for protesting her distaste over a long prayer banner that graced the walls of Cranston West HS for years, resulting in it's removal, is to receive the Hugh Hefner First Amendment Award. Hmmm...Playboy and Godlessness.

They're trying to pass a law here that would give lawbreaking (As in, entering the US of A Illegally) immigrants drivers licenses. The august solons of RI say it is so they can get back and forth to work. Is this starting to sound a bit weird to you? Lets see, they broke the law so they should be in jail, but we are rewarding them with drivers licenses so they can displace American citizens in jobs. Yikes. I think there may be a problem. On Monday, an Illegal  driving a car without a license hit and killed a kindergarten boy, just walking quietly in his USA neighborhood. Very sad. I get it...they need licenses so they won't be driving illegally when hitting people.

America really does have heroes. It just doesn't have enough people in the right places to acknowledge them.

Here's how brain dead my Spell Check is. They don't have any idea of the word "solon". It was first used in 1625. What I Call my Spell Check rhymes with solon.

The Answer:
1. NYC has the most billionaires with 70. Moscow is second! London has the most ultra-millionaires with 4,421. Tokyo has the most millionaires with 461,000. Rome, Mexico City and Seoul all are quite rich with millionaires. Mubai and Istanbul rank very high on the Billionaire list, but have relatively few millionaires. Overall there are 495 Billionaires and 3.65 Million Millionaires.  2. The old familiar Maryland centric roster of annual champs is reclining a bit as more and more colleges up their intensity for this exciting sport. #1 in the land is North Carolina from the traditionally strong ACC. Next is 20 time champion Syracuse which is followed by Ohio State, Maryland, Denver, Notre Dame, Cornell, Duke, Loyola (Md) and The Lehigh University! Perennial contender Johns Hopkins is 15 and another Maryland team Towson is 17.  Lehigh beat North Carolina in last year's opener and that twosome begins it all again this afternoon.

In case you think I'm using Spell Check as a scape goat, it also doesn't recognize Lehigh. Maybe that's my problem -- Lehigh is out of the Spell Check loop! Thanks God.

For all of you novel lovers, I'm taking today to form in my mind the next several chapters. So maybe Friday The Conscience will be back. Or tomorrow, if it rains.
