Deceit: 

 

 

I see where smoking is at an all-time low. But more and more people are dying from fentanyl and other killer drugs. Human frailty and those enabling it is the real problem. Maybe we need more people back in church again and less devotion to the internet gods. 

 

I should have done more cross-country skiing when I was younger. I think of lots of things I shoulda done. This is Tidlet for younger people. Don’t let societal pressure rule your heart. 

 

If we can get China to at least go neutral, Putin would really be on an island and Ukraine would have some real hope. 

 

Today is National Awkward Moments Day. Finally, a day for my most refined talent. 

 

I wish I was smart enough to be a great poet. Though, I have learned that pretty good poetry flows freely from emotions. Of looking and seeing and understanding, with feelings. Of touching with your heart. Maybe I don’t need a new dictionary afterall. 

 

The latest manifestation of cultural human frailty malfeasance is a painful hand problem called scratch-off-ticket syndrome. 

 

The Question: 

Tomorrow is Saint Joseph’s Day. The great thing about it to me is a Lucious cream filled pastry produced in the tens of thousands around here. What is it called?

Yesterday UPenn swimmer Lia Thomas made His-tory by being the first Transgender to win an NCAA swimming championship. Of course, that has been the big argument since she became a woman swimmer - it is former biological; advantage fair to female swimmers. Lorts of rationale has been invented to support opinions from both sides. Arguably greatest female tennis player ever, Martina Navratilova thinks not, that it isn’t fair. That there should be an asterisk. Martina points out that Lia went form 462nd ranked male swimmer to number one ranked female swimmer.  

 

Let the upsets begin,,, and tey sure did yesterday First #5Iowa went down to #12 Richmond. Yes that Iowa – Big Ten Champ and my secret sauce for my brackets. Ugh. Then another 12 beat a 5 when New Mexico State beat UConn. Thy say #11 Michigan over #6 Colorado State was an upset. But it may have been more a case of over seeding the wolverines. And then there was the big won where Little Saint Peters of Jersey City NYJ beat the mighty professional team in waiting, and number 2 – Kentucky. I have been saying since December that this year looks like anybody's tournament, and it is shaping up that way. I've’ been picking upsets too, but just the wrong ones. Yides. 

 

I think it is time for new Pics on the Tids website. Santa just doesn’t cut it anymore. 

 

In watching this basketball season, it seems to me that a lot of teams could have much better records if they spent more time practicing Free Throws. Some fired coaches would still have jobs. 

 

Our state just got millions for bicycle trail bridges, yet we have miles and miles of roads with potholes that swallow cars whole. Ther tire rim lobby must have a very good extortionist on their team. 

 

Some poets just rhyme words while others tell stories deep and profound. 

 

One if the worst things about Covid is that has added to the divide in the country. I say, it’s a human’s right to choose and leave politics out of it.  

 

It seems to me that the measure of great poets is based on how they can take a relatively simple concept and make it almost impossible to understand.  

 

It will be interesting to see what happens to home prices as interest rates go up. 

 

Covid is the latest excuse that justifies Congress busting budgets. As if they need another excuse! 

 

Speaking of human frailties, Ukraine may be the big one but at this very moment in time there are 22 countries at war! From Yemen to Afghanistan, to Cameroon and Columbia. 

 

A lot of us here are hoping the Russian population will rise up against Putin when they find out what he is doing. In the news item above we saw that he had a big nationalistic rally before over 200,000 in Moscow. Here’s what he said: "We know what we need to do, how to do it and at what cost. And we will absolutely accomplish all of our plans," Putin praised his soldiers at the celebration to mark the eighth anniversary of Russia's seizure of the Crimean Peninsula from Ukraine in 2014. "Shoulder to shoulder, they help each other, support each other and when needed they shield each other from bullets with their bodies like brothers. Such unity we have not had for a long time," he said. Putin told the crowd gathered in and around Luzhniki Stadium.  according to Russian police and state-run media. Prior to Putin speaking, other speakers praised him and talked of putting down Nazis and that the Feb. 24 invasion necessary to defend against the "genocide" of Russian-speaking people in Ukraine. The fact that they had such a rally shows that the pressure is mounting on him, according to world observers. 

 

Knowing what goes on in Russia has always been a mystery. 

 

The Answer: 

The creamy Saint Joseph’s Day delight is called the Zeppole. Double yum! 

 

Yesterday we ended with Drinking song for the Irish, Today we end with a sugar fix recipe for the Italians. 

 

Zeppole's are usually simply dusted with powdered or granulated sugar, but they can be filled with whipped cream, chocolate cream, custard, or sweetened ricotta studded with chocolate or candied fruit. This recipe is for the most famous and widespread version, which originated in Naples. 

 

For the Dough: 

  • 1 cup water 

  • 2 tablespoons unsalted butter 

  • 1 pinch fine sea salt 

  • 2/3 cup all-purpose flour 

  • 3 medium eggs 

Place water, butter, and salt in a small saucepan over high heat. Bring to a boil, stirring constantly. When the butter has melted, whisk in the flour and continue to stir, with a whisk or wooden spoon, until batter is smooth and does not stick to the sides of the pot. Remove from heat and transfer the dough to a bowl to cool to room temperature. Once it has cooled, add the eggs, one at a time, mixing well after each addition. Refrigerate the dough while you prepare the pastry cream filling (20 to 30 minutes). 

For the Pastry-Cream Filling: 

In a small bowl, beat the egg yolks with the sugar until combined. Add the flour to the egg mixture, whisking well until combined. Place milk and lemon zest in a medium, heavy-bottomed saucepan and bring to a boil over medium-high heat. When the milk begins to boil, remove it from the heat and slowly add the egg mixture, constantly whisking, until the mixture is smooth. Return to medium heat and continue whisking until the cream thickens. Transfer the cream to a bowl, cover the surface with a piece of parchment paper, and let cool. Meanwhile, make the zeppole. 

Making the Zeppoole: 

Prepare 8 (3-inch) squares of parchment paper or aluminum foil. Transfer the dough to a pastry bag with a star-shaped tip. Pipe a ring of dough onto each square of paper or foil, about 2 inches in diameter, to form a doughnut shape. Heat several inches of frying oil in a large pot with high sides to 320 F (160 C). Drop the zeppole (still on the paper or foil) in the oil one or two at a time to avoid crowding. The paper or foil will detach itself after a few seconds and you can remove it from the oil with tongs or a slotted spoon. When puffy and golden brown, remove each zeppole with a slotted spoon and drain on a paper towel-lined platter or tray. When cool enough to handle, fill another pastry bag with pastry cream and attach a star-shaped tip. Slice the zeppole in half and fill with a ring of pastry cream. Place the top half on the cream and then fill the center hole with a little more pastry cream. Place an a marena cherry on top of the cream in the center of each doughnut, then dust all of them lightly with powdered sugar. Serve hot.
